The Marshmallow Fizz is a fan favourite in bar Eau de vie, Australia. This recipe is a variation from the one presented by venue manager Russ McFadden from the Eau de vie Sydney. My recipe substitute marshmallow syrup with simple syrup and pineapple vinegar with pineapple juice for ease of creating.

Method

Add all ingredients except soda water to a shaker and dry shake without ice to ensure the egg is well shaken. Then add ice and shake again. Pour the mixture into the flute glass and top up with soda water. Garnish with roasted marshmallows and serve.
