Make Me a Cocktail

Lavender syrup

In a shallow pan bring to the boil:
1/2 cup of water
1 tbsp of lavender flowers
1/4 cup sugar
1/2 cup of liquid honey
Once the mixture is boiling, lower to a simmer and add the sugar and honey, stirring for 5 minutes on a low heat. Remove from the heat and chill overnight. Strain using a cheesecloth and store in an airtight container for up to 10 days.
