- Dark rum 60 ml, Cognac 60ml, Honey 15ml, Lemon 1, Tea 500 ml, Cloves 12

- Put the tea, cognac, rum, cloves, honey and four thin strips of lemon zest into a saucepan and gently heat - without boiling

- After four minutes remove from the heat and let the mixture infuse for another five minutes, before straining into heatproof glasses
