I wanted a less citrusy tiki drink that would evoke more of a Manhattan feeling, so this is what I came up with. It's called a Jolly Jack Tar because (a) it has a tiki/nautical theme, and (b) I'm British, so it seemed appropriate.

How to make a Jolly Jack Tar
- Aged rum 60ml, Orange liqueur 15ml, Velvet Falernum 7.5ml, Peychaud's Aromatic Bitters Dash, Sugar 15ml, Vanilla Essence

- Make the sugar syrup

- Heat demerara sugar and water until it is dissolved, and add a teaspoon of vanilla essence

- Add all ingredients to a cocktail shaker with ice and shake well

- Strain into a chilled martini glass

- Garnish with a ribbon of lemon peel, twisted round the glass the distribute the oil, and serve
