The St. Hendrick's is a tall, gin-led highball that riffs on the modern gin-and-tonic era, leaning into the garden-fresh cues that made cucumber-and-botanical serves so popular. Rather than chasing a deep classic backstory, you’ll find it sits comfortably in that contemporary “elevated G&T” family: long, sparkling, and built around bright aromatics. Served in a pint glass, it reads as easygoing and sessionable, but with enough character to feel like a proper cocktail.
Expect the gin’s botanicals to set the tone, with elderflower liqueur adding a soft, floral sweetness that smooths the edges. Lime juice brings a crisp, pointed tartness that keeps the elderflower in check, while tonic water stretches everything into a clean, bitter-sweet sparkle. Mint leaves lift the aroma, and the cucumber slice adds a cool, green freshness; a lime wedge reinforces the citrus snap from first sip to finish.
This is the kind of drink you’ll reach for when you want something refreshing but not bland—ideal for warm afternoons, casual get-togethers, or as a bright aperitif before dinner. If you like floral notes, zesty citrus, and the bracing bite of tonic, it’s an easy crowd-pleaser that still feels a little special.

Ingredients
Cocktail Colin says:
Gin and tonic water lead with crisp quinine bite, softened by elderflower liqueur’s floral sweetness, while lime juice adds a bright snap; mint leaves, cucumber slice, and a lime wedge layer cool green freshness over the top. It works because the tonic’s bitterness and lime’s acidity keep the elderflower in check as cucumber and mint amplify the gin’s botanicals, ideal for drinkers who like refreshing, aromatic highballs.
