The Fallon is a tequila-forward, Old Fashioned–style sipper that leans into agave spirits with a darker, sweeter twist. With no widely established backstory attached to the name, you’ll find it fits neatly into the modern wave of spirit-led cocktails that swap out traditional sugar for more characterful syrups, keeping the focus on a bold base and a few carefully chosen accents.
On the palate, tequila blanco brings clean, peppery agave notes that cut through the richness of maple syrup. A teaspoon of agave syrup reinforces the tequila’s natural sweetness, tying the drink together so the maple doesn’t feel separate or heavy. Aromatic bitters add a dry, spiced edge that keeps the sweetness in check, while a pinch of salt sharpens everything—making the agave taste brighter and the finish feel more defined.
Serve this when you want something contemplative but not fussy: a slow, rocks-glass drink that suits late evenings, cool weather, or a post-dinner pour. If you like tequila but usually reach for whiskey-based Old Fashioneds, this is an easy crossover—sweet, structured, and confidently spirit-forward.

Ingredients
Cocktail Colin says:
Tequila blanco leads with bright agave snap, rounded by a hefty pour of maple syrup and a teaspoon of agave syrup, while aromatic bitters add dry spice and a pinch of salt sharpens the edges and pulls the sweetness into focus. It works as a dark-leaning Old Fashioned riff where bitters and salt keep maple from feeling cloying, best for tequila fans who like rich, dessert-tinged sippers.

FAQ's
What is the ideal type of tequila to use for The Fallon?
For The Fallon, using a high-quality, 100% agave tequila, preferably blanco or silver tequila, is ideal. These tequilas will provide a clean, crisp flavor that complements the sweet and salty notes of the cocktail.
Can I substitute maple syrup with another sweetener?
Yes, you can substitute maple syrup with honey or a simple syrup if necessary. However, keep in mind that maple syrup provides a unique flavor profile that contributes to the character of The Fallon.
What garnish works well with The Fallon?
A slice of lime or a twist of orange peel can add a refreshing aroma and a decorative touch to The Fallon. The citrus element enhances the cocktail's flavors.
Is there a non-alcoholic version of The Fallon?
To create a non-alcoholic version of The Fallon, you can use non-alcoholic tequila or a tequila-flavored syrup combined with the remainder of the non-alcoholic ingredients. This will mimic the flavor profile while being alcohol-free.
How should The Fallon be served for the best taste?
The Fallon should be thoroughly shaken with ice and then strained into a lowball glass over fresh ice. Serving it cold enhances its rich flavors and the smoothness of the tequila. A pinch of salt can be added to the glass rim or directly into the cocktail for an extra layer of flavor.
