Cherry Popper is a bright, playful highball that sits firmly in the modern “fruit-and-fizz” family of cocktails, built for easy drinking and bold colour. Rather than leaning on a long classic pedigree, it reads like a contemporary bar creation: a gin-based cooler sweetened with liqueurs and lifted with citrus and soda. You’ll find it lands somewhere between a spritz and a spiked soda, with enough spirit backbone to keep it from feeling like pure pop.
On the palate, gin’s crisp botanicals give structure to the sweetness of peach schnapps, while crème de menthe brings a cool, minty sheen that immediately changes the drink’s direction. Lime juice cuts through the liqueurs with sharp acidity, and the simple syrup smooths any rough edges so the balance stays rounded. Lemon-lime soda stretches everything out, adding bright citrus sparkle and a clean, fizzy finish.
Serve it in a highball when you want something tall, refreshing, and a little nostalgic. It suits warm afternoons, casual parties, and anyone who likes their gin softened by fruit, mint, and bubbles rather than dominated by juniper. Expect it to go down easily, especially as an upbeat opener before heavier drinks.

Ingredients
Cocktail Colin says:
Peach schnapps and simple syrup lead with candy-like stone-fruit sweetness, while gin’s botanicals peek through a cool creme de menthe sheen; lime juice adds a sharp snap, and lemon-lime soda lifts everything into a fizzy, bright finish. It works because the minty chill and citrus acidity keep the sugars from cloying, making it ideal for drinkers who like sweet, fizzy, fruit-forward highballs with a herbal edge.
