The creator of this drink is a young bartender by the name of Bahram Salah working at a bar/tapas restaurant (pinchos) in Fittja, Botkyrka, Sweden. He likes tropical and sour drinks and he had coconut rum in his bar but had never used it. He copied the same style to making a Clover Club, and there the Tropicana Passion was born. People really loved it and he now is publishing it so everybody can enjoy. ~ Bahram Salah

Method

Put coconut rum in a cocktail shaker then add lemon juice, sugar syrup, egg white and passion fruit purée. Dry shake for 30-50 seconds. Add 6-8 cubes of ice to the shaker and shake for 20 seconds. Double strain the mixture into a chilled glass. Top with crushed ice and garnish with half a passion fruit, a lemon wheel or a lemon twist before serving.
