How to make a Hot Tea Toddy

- Put the tea, cognac, rum, cloves, honey and four thin strips of lemon zest into a saucepan and gently heat - without boiling

- After four minutes remove from the heat and let the mixture infuse for another five minutes, before straining into heatproof glasses
