Honey Bee is a bright, rum-forward sour that leans into the simple, timeless pairing of citrus and honey. While it doesn’t have a single widely agreed origin story, it sits comfortably in the modern “bee’s knees” family of drinks—where honey syrup replaces plain sugar to give a softer, more aromatic sweetness. With white rum as the base, you get a clean, lightly sweet canvas that keeps the drink crisp rather than heavy.
You’ll find the white rum carries the drink’s backbone, while honey syrup adds a rounded sweetness that feels richer than simple syrup. Lemon juice brings the main snap and structure, keeping the balance firmly in refreshing territory. A small measure of orange juice smooths the edges, lending gentle fruit sweetness that bridges the honey and the lemon without stealing the spotlight.
Served in a cocktail glass, this is a great choice when you want something zesty but not sharp, sweet but not cloying. It suits aperitif moments, warm-weather sipping, and anyone who likes a classic sour profile with a softer, honeyed finish.

Cocktail Colin says:
White rum leads with clean cane sweetness, quickly wrapped in honey syrup’s floral richness, while lemon juice brings a sharp, mouthwatering snap and a small splash of orange juice adds soft, pulpy brightness. The honey rounds the rum and cushions the lemon’s bite as the orange bridges them, making a simple, balanced sour for rum lovers who like their citrus crisp but not austere.

FAQ's
What is the best type of honey syrup to use for a Honey Bee cocktail?
For a Honey Bee cocktail, using a high-quality, pure honey syrup is recommended. Floral honeys, such as orange blossom or clover, add a delightful aroma and subtle sweetness. The syrup should be made by diluting honey with water, usually in a 1:1 ratio, to ensure it integrates smoothly into the drink.
Can I substitute another type of rum instead of white rum in a Honey Bee cocktail?
Yes, you can substitute another type of rum in a Honey Bee cocktail, though it may alter the original flavor profile. Dark rum can add a richer, more complex taste, while spiced rum introduces additional flavors like cinnamon and vanilla. However, white rum is preferred for its light, crisp character that balances the sweetness of the honey and the acidity of the citrus without overpowering them.
How can I adjust the Honey Bee cocktail if it's too sweet?
If the Honey Bee cocktail is too sweet for your taste, you can adjust the balance by increasing the amount of lemon juice to add more acidity or by reducing the quantity of honey syrup. Start with small adjustments, adding more lemon juice or decreasing the honey syrup by small increments, tasting as you go until you reach the desired balance.
What is the significance of shaking and not stirring a Honey Bee cocktail?
Shaking a Honey Bee cocktail is crucial for achieving the right texture and temperature. It aerates the drink, creating a light, frothy layer on top, and ensures that the honey syrup fully integrates with the other ingredients for a smooth consistency. Stirring, in comparison, won't achieve the same level of integration or chill the cocktail as effectively.
Is there a non-alcoholic version of the Honey Bee cocktail, and how can I make it?
Yes, you can create a non-alcoholic version of the Honey Bee cocktail by substituting the white rum with a non-alcoholic spirit that mimics the clean, neutral flavor profile of rum, or simply by increasing the amounts of the non-alcoholic ingredients. For example, use non-alcoholic rum alternative, or just mix the honey syrup, orange juice, and lemon juice with sparkling water or ginger ale for a refreshing, booze-free beverage.
