1. Boulevardier
Ingredients
Method

- Pour all ingredients into a shaker with ice

- Shake well and strain into chilled cocktail glass

- Garnish with an orange wedge and serve
2. Christmas cosmopolitan
Ingredients
Method
-
- In a mixing glass with ice add in a couple of slices of fresh ginger, before pouring in the vodka, gin and cranberry juice
-
- Next add the juice of half a lime and stir to combine and chill
-
- Strain into a chilled cocktail glass
-
- Garnish with a lime peel twist and serve
3. Hazelnut Hot Toddy
Ingredients
Method
-
- In a medium-sized saucepan, whisk together the Frangelico, bourbon, water, brown sugar, and vanilla
-
- Add the cinnamon sticks and cloves
-
- Heat on medium for about 5 minutes, until hot and the brown sugar has dissolved, but do not bring to a boil
-
- Pour into cups, making 4 small servings or 2 large
-
- Garnish with additional cinnamon sticks and fresh herbs if desired
4. Sazerac
Ingredients
Method

- Take a chilled lowball glass and swirl the absinthe around the sides to coat the glass, and fill with ice
-
- In a mixing glass muddle the bitters and sugar, then add the cognac and stir to combine
-
- Disgard the ice and excess liquid from the glass and pour in the mixed drink
-
- Garnish with a lemon peel and serve
5. Chocolate Orange
Ingredients
Method

- First rim a cocktail glass with sugar syrup then dab onto some grated dark chocolate
-
- Add the vodka, crème de cacao, orange juice and orange syrup to a cocktail shaker with ice and shake well before straining into the rimmed cocktail glass and serving
6. Bitter orange & cardamom martini
Ingredients
Method

- Heat up the marmalade gently in a saucepan to make it runny
-
- Add in the cardamom pods and crush to release their flavour
-
- Once warmed for a couple of minutes take off the heat and leave to cool for 20 minutes
-
- Once cooled, add the Cointreau and lemon juice to a mixing glass and add in the marmalade cardamom mixture, and stir to combine
-
- Take a chilled martini glass and add a dollop of marmalade to the bottom, before pouring in the mixture
-
- Serve with a cardamom pod floating on top to garnish
7. Mimosa
Ingredients
Method
-
- Add orange juice to the bottom of a champagne flute before topping up with chilled Prosecco
-
- Garnish with an orange peel twist and serve
8. Ginger Mojito
Ingredients
Method
-
- Muddle the ginger in the base of a cocktail shaker
-
- Add the mint leaves and muddle lightly to release the flavour
-
- Add ice, then the rum, sugar syrup and lime juice, and shake well
-
- Strain into a highball glass over ice
-
- Top up with ginger beer, stir briefly, and garnish with a mint sprig before serving
9. Christmas Eve
Ingredients
Method

- Place all ingredients into a cocktail shaker with a handful of ice and shake hard

- Strain the drink into a martini glass using a fine strainer
-
- Garnish with a twist of lemon zest and serve
10. Winter Waltz
Ingredients
Method

- Add the whisky, amaro, allspice and bitters to a cocktail shaker with ice
-
- Shake firmly until the outside of the shaker becomes frosted, before straining into a chilled martini glass
-
- Garnish with a star anise and serve
11. Pumpkin Sour
Ingredients
Method
-
- First you need to make the spiced pumpkin syrup
-
- In a saucepan, add a cup of brown sugar, a cup of water, half a cup of pumpkin purée, and a teaspoon each of nutmeg, ginger, allspice and cinnamon
-
- Over medium heat until slightly thickened
-
- Remove from the heat and place a vanilla pod into the syrup and chill overnight
-
- Strain through a cheesecloth and store in a covered container, in a fridge, for up to one week
-
- Combine the bourbon, lemon juice, egg whites and pumpkin syrup in a cocktail shaker with ice
-
- Shake well then strain into a rocks-filled rocks glass
-
- Garnish with ground nutmeg, a cherry and Angostura bitters
12. Espresso Martini
Ingredients
Method

- Pour all ingredients into a cocktail shaker filled with ice
-
- Shake vigorously; it should be somewhat frothy
-
- Strain into a chilled cocktail glass and serve
13. Mince pie martini
Ingredients
Method
-
- First make a mincemeat syrup
-
- Heat the sugar with mincemeat and water
-
- Bring to the boil before cooling and straining
-
- Dampen the edges of a cocktail glass with the mincemeat syrup, before dipping in some mixed spice to rim the glass
-
- In a cocktail shaker add the mincemeat syrup with the gin, vermouth and dark rum with ice and shake for 20 seconds
-
- Strain into the cocktail glass and serve
14. Hot Toddy
Ingredients
Method
-
- Warm a heatproof glass
-
- Add the whisky, lemon juice, syrup, cloves and honey
-
- Top up with boiling water and garnish with a lemon skewered with cloves and a cinnamon stick
-
- Give it a quick stir and serve immediately
15. The TCL Mulled Fizz
Ingredients
Method
-
- First make the spiced syrup
-
- Split the vanilla pod and grate the half nutmeg, and add them both along with the other spices to 50ml of warm water, stirring occasionally for 3-4 minutes to infuse all the flavours
-
- Leave to cool for about 10 minutes or so in the fridge and then strain
-
- Next add all the liquid ingredients except the sparkling wine into a cocktail shaker filled with ice
-
- Shake for 10-15 seconds or until the outside of the shaker becomes frosted
-
- Double strain into a chilled champagne flute then top up with the sparkling wine
-
- Garnish with an orange twist and serve
