Koffiecocktails doen iets wat de meeste andere drankjes niet kunnen — ze trekken cafeïne en alcohol in tegengestelde richtingen en eindigen op de een of andere manier in balans. De Espresso Martini is de hoofdgast: wodka, verse espresso, koffielikeur en een suikeraanpassing, hard genoeg geshaket om een schuimlaag te creëren, zonder ijs geserveerd. De Mudslide neemt hetzelfde idee en buigt het naar dessert toe, met room en Irish cream die naast de koffie meelopen.
De Espresso Galliano werkt de espresso-en-kruidenlikeur-as vanuit een andere hoek, en de Shaft is de gelaagde shotversie — Kahlúa, wodka, Baileys, koude espresso — gemaakt om in één keer te drinken. Wat deze lijst verbindt is dat de koffie geen decoratie is; hij is structureel. De bitterheid van de espresso doet hetzelfde werk als de Campari in een Negroni — hij geeft het drankje iets om de zoetheid tegen aan te duwen.
De meeste belonen een vers getrokken espresso boven die uit een fles of instant, en de meeste komen er beter uit aan het eind van een maaltijd dan als opening. Het zijn geen sessiedrankjes; eentje is meestal genoeg. Shake ze goed koud, serveer ze in een glas dat warmte goed vasthoudt, en verwacht niet dat een tweede dezelfde landing maakt — cafeïne, suiker en alcohol stapelen sneller dan je denkt.
