Christmas pudding isn't a classic cocktail ingredient, but the rich flavours of the spiced cake is put to wonderful use in this gin based cocktail

Method

You’ll need to extract as much flavour from the Christmas pudding as you can before making your cocktail. Infuse the gin with the Christmas pudding for at least 30 minutes, ideally a couple of hours.

Once infused, simply add the gin, lemon juice, sugar syrup and egg white into a cocktail shaker with ice, shake hard for 10-15 seconds before straining into an ice filled lowball glass. Serve with an orange peel twist and enjoy.
