Christmas pudding isn't a classic cocktail ingredient, but the rich flavours of the spiced cake is put to wonderful use in this gin-based cocktail.

Method

Infuse the gin with the Christmas pudding for at least 30 minutes, ideally a couple of hours, to extract the maximum flavour from it. Then add the infused gin, lemon juice, sugar syrup and egg white to a cocktail shaker with ice and shake hard for 10-15 seconds before straining into an ice-filled lowball glass. Serve with an orange peel twist to garnish.
