Raspberry Collins is a bright, fruit-forward twist on the long-drink Collins family: gin lengthened with citrus and soda for an easy, refreshing serve. While the “Collins” template is a well-established style, this raspberry-leaning version reads as a modern variation that swaps some of the usual simplicity for a more vivid berry character, keeping the same tall, sparkling profile you expect from the format.

You’ll find dry gin’s crisp botanicals framed by a generous hit of lemon juice, with sugar or simple syrup smoothing the edges and keeping the citrus from feeling too sharp. Crème de framboise deepens the raspberry note with a sweet, liqueur richness, while fresh raspberries reinforce that juicy red-fruit impression. A dash of orange bitters adds a subtle lift, nudging the fruit and gin together, and soda water stretches everything into a light, effervescent finish.

Serve it when you want something long, lively, and not too heavy—ideal for warm afternoons, casual get-togethers, or as a crowd-pleasing aperitif. If you like gin and citrus but prefer a softer, fruitier lean, this is the kind of highball you’ll reach for again and again.

Cocktail Colin says:

5/5

Dry gin leads with crisp botanicals wrapped in crème de framboise and muddled raspberry, while lemon juice brings a sharp, mouthwatering snap; simple syrup rounds the edges, soda water lifts everything into a bright fizz, and a dash of orange bitters adds a subtle citrus-spice finish. It works because the lemon’s acidity and bubbles keep the berry sweetness from feeling heavy, making it ideal for gin fans who want an easy, patio-ready highball.
