The Devil's Handshake is a bold and zesty cocktail that combines the earthy tones of Tequila Añejo with a tangy and sweet concoction of lime and pineapple juices, balanced by the warm bite of ginger purée and smoothed over with sugar syrup. This tropical-inspired drink, often served in a highball glass, invites a symphony of flavors that suggest a devilishly good time with every sip.
The addition of egg contributes a creamy texture, making the Devil's Handshake a complex and layered cocktail that is as intriguing as its name implies. This mixture results in a cocktail that has a striking balance between sweet, sour, and spice, catering to those with a taste for a little bit of devilry in their glass.

FAQ's
Can I substitute the Tequila Añejo in the Devil's Handshake with another type of tequila?
Yes, you can substitute Tequila Añejo with another type of tequila, like a blanco or reposado, if you prefer a lighter flavor. However, Tequila Añejo adds a distinct aged flavor that complements the sweetness of the pineapple juice and the spiciness of the ginger, so your cocktail will have a slightly different flavor profile.
Why do we use egg white in the Devil's Handshake, and is there a specific technique to incorporate it?
Egg white is used in the Devil's Handshake to create a frothy texture and smooth mouthfeel. The technique to incorporate it is called 'dry shaking,' where you first shake the egg white with the other ingredients without ice to emulsify it, then add ice and shake again to chill the drink. This results in a silky foam on top of the cocktail.
What kind of garnish works best with a cocktail like the Devil's Handshake?
For the Devil's Handshake, a garnish that complements its spicy and tropical flavors would be ideal. A slice of lime, a piece of pineapple, or even a sprig of mint can add visual appeal and a subtle aromatic enhancement to the drink.
How does the alcohol content in the Devil's Handshake compare to other common cocktails?
The Devil's Handshake has an alcohol content of 15.25%, which places it in the mid-range compared to other cocktails. It's stronger than light cocktails like a Mimosa (around 10%) but less potent than heavy-hitters like a Martini or Manhattan (around 30-40%). This makes it a good choice for those who prefer a moderately strong drink.
Is the Devil's Handshake suitable for vegetarians or individuals with specific dietary restrictions?
The Devil's Handshake is suitable for vegetarians, but not for vegans due to the use of egg white. For those with dietary restrictions, especially allergies to eggs, it's recommended to either omit the egg white or use a vegan egg white substitute to maintain the cocktail's texture without compromising dietary needs.
