How to make a Sugar and spice

- To make the garam masala spiced-pineapple, heat a knob of butter in a frying pan and fry pineapple chunks cut from a small pineapple, until golden brown

- Add a teaspoon of garam masala and a teaspoon of brown sugar until the sugar has dissolved

- Leave to cool

- Muddle four cubes of the spiced pineapple chunks with the sugar at the bottom of a cocktail shaker

- Add the rum and Galliano along with a handful of crushed ice and shake hard in a cocktail shaker

- Strain into a whisky tumbler filled with crushed ice
