Power tips
Elevate the Hey Mambo with these master mixologist tips
- Dial the smoke with a “mezcal rinse” option: If the drink is reading too smoky or too vegetal, keep the full mezcal aroma but reduce its weight—rinse the blender tin (or the serving glass) with espadín, dump the excess, and make the drink with just the blanco tequila (or a smaller mezcal measure). You keep the mezcal nose on the first sip without letting smoke bulldoze the coconut–pineapple core.
- Treat coconut cream like a texture ingredient, not just sweetness: Use a high-fat cream of coconut and warm it slightly (or squeeze the bottle well) so it’s fully homogeneous before measuring. Cold, partially separated coconut gives a waxy mouthfeel and dulls aromatics. For a cleaner, “bar-smooth” finish, add a tiny pinch of fine salt (literally a pinch) to sharpen pineapple and make Aperol’s bitterness read more like orange peel than pith.
