Batch It Before the Doorbell Rings: Pitcher Cocktails for Alberta's Autumn Game Nights

Every host learns the same lesson eventually: the person shaking drinks to order spends the night with their back to the party. Make Me a Cocktail's own guide to Christmas punch recipes offers a rule of thumb that works well beyond December, roughly a gallon of punch for every 10 guests, and the same logic applies to an October card table in Calgary or Red Deer. Mix the drinks before anyone arrives and leave them where guests can help themselves, and the host finally gets a seat at the table.
There is also a fresh reason the card table is on people's minds in Alberta this month. On Tuesday, 13 October, the province's transition window closed, and gambling sites that had been serving Albertans without registering now have to stop. Players who like the odd hand of online blackjack after the board games come out are now steered towards regulated Alberta online casinos, which answer to provincial oversight instead of a licence issued somewhere far from the Prairies. For a home host, the rest of this piece is about the drinks.
Why the cutoff matters to casual players
Alberta opened its private online casino market on 13 July with 22 sites. By mid October the Alberta iGaming Corporation's list had grown to 51 sites run by about 30 companies, alongside the government's own PlayAlberta, which has operated since 2020. Players must be 18 or older and physically inside the province while they play.
For someone who plays a few hands with friends on a Saturday, the practical changes are small but real. Registered sites have to check ages and offer deposit and time limits, and every one of them plugs into Alberta's central self exclusion program. Under AGLC's GameSense self exclusion program, a player can choose six months, one year, two years or three years away, covering casinos and regulated online sites alike, and anyone enrolled cannot collect a prize while the agreement runs. None of that makes a game night more exciting. It just means the social side of the evening stays social.
The batching rules that save the host
Batching is not just multiplying a recipe by ten. A stirred drink made in a mixing glass picks up water from the ice, usually around a fifth of its final volume, and that dilution is part of the recipe. When a stirred cocktail is bottled ahead of time, that water has to go in by hand before the bottle goes in the fridge, or the first glass will taste hot and harsh.
Bubbles are the opposite case. Soda, tonic, sparkling wine and ginger beer should only meet the pitcher once guests have arrived, because carbonation fades fast once poured. Citrus sits in the middle: juice squeezed on the morning of the party tastes far brighter than juice squeezed the night before. And the frozen fruit ice ring from the punch guide, set in a bundt pan, keeps a bowl cold for hours without turning it to water.
Four pitchers for the table
Orchard Rye Punch. Combine 500 ml Canadian rye, 1 litre unfiltered apple cider, 120 ml fresh lemon juice, 90 ml maple syrup and six dashes of aromatic bitters. Chill it in a punch bowl. Just before serving, add 750 ml cold soda water and the ice ring. Rye's spice and the cider's tartness make this the drink that disappears first on a cold night.
Paloma Pitcher. Stir together 400 ml blanco tequila, 200 ml pink grapefruit juice, 100 ml lime juice and 60 ml simple syrup, then refrigerate. Top with 1 litre of grapefruit soda at serving time and offer a saucer of flaky salt for anyone who wants a salted rim. It is easy to pour one handed while holding a hand of cards.

Fridge Door Martinez. In a clean 1 litre bottle, combine 400 ml gin, 200 ml sweet vermouth, 40 ml maraschino liqueur, eight dashes of orange bitters and 130 ml cold water. Seal it and chill it overnight. Pour straight into small coupes with an orange twist. Serve it in small measures: this is the strong one, so it should be sipped slowly.
Ginger Pear Fizz (alcohol free). Mix 1 litre pear nectar, 120 ml lemon juice and 80 ml ginger syrup with a few sprigs of fresh thyme, then top with 1 litre ginger beer just before serving. Put it in the same kind of glass as everything else, so nobody has to explain what they are drinking.
Hosting the card table
A good game night has a clear rhythm, and the drinks should follow it rather than drive it. Put the alcohol free pitcher out first and keep it topped up all evening, with a jug of water beside every batch. Food matters more than most hosts think: a tray of something salty and substantial, such as Montreal smoked meat sliders or a big dish of perogies, slows the pace of the whole table.
Keep the stakes friendly. Play money chips and a prize for the evening's top stack keep a home poker or blackjack night firmly on the side of entertainment, and they spare the host from settling arguments over cash. Anyone who wants to play online later can do so on their own time, on a site that carries the AiGC logo.
Then plan the ending. In Alberta, the first snowfall can arrive with little warning in October, and the roads after a long game night are the real risk. Count the designated drivers before the first pour and keep taxi numbers on the fridge door next to the Martinez. The best time to call the last hand is while everyone is still having fun.
