Method
How to make a Sugar and spice

Serves 1 · Takes 3 minutes
White rum 30ml, Galliano 15ml, Pineapple 4 chunks (Pre-make garam masala flavoured chunks), Sugar Teaspoon (Used for garam masala pineapple chunks), Butter Tablespoon (Used for garam masala pineapple chunks), Garam masala Teaspsoon (Used for garam masala pineapple chunks)
To make the garam masala spiced-pineapple, heat a knob of butter in a frying pan and fry pineapple chunks cut from a small pineapple, until golden brown
Add a teaspoon of garam masala and a teaspoon of brown sugar until the sugar has dissolved
Leave to cool
Muddle four cubes of the spiced pineapple chunks with the sugar at the bottom of a cocktail shaker
Add the rum and Galliano along with a handful of crushed ice and shake hard in a cocktail shaker
Strain into a whisky tumbler filled with crushed ice
Garnish with two pineapple leaves and serve
