EVA GIMLET is a sherry-forward twist on the gimlet idea, swapping the usual gin base for a split of dry and sweet sherry and sharpening it with lime. You won’t find a widely agreed origin story for this particular name, but the drink sits comfortably in the modern, low-ABV cocktail tradition: aromatised, wine-based, and built around balance rather than brute strength. The absinthe dash signals a more contemporary, bar-style flourish, adding a high-impact accent to an otherwise elegant profile.
On the palate, the dry sherry brings a crisp, savoury edge while the sweet sherry adds roundness and a gentle sweetness that keeps the lime juice from feeling too austere. The lime’s bright acidity pulls the two sherries into focus, giving you a clean, gimlet-like snap without relying on a full-strength spirit. A dash of absinthe lifts the aromatics with anise intensity, and the ginger slice adds a fresh, spicy bite that lingers after the citrus.
Serve this in a cocktail glass when you want something refined but different—ideal as an aperitif or for early-evening sipping. You’ll enjoy it if you like citrus-led drinks that aren’t overly sweet, and if you’re curious about sherry cocktails with a little edge. It suits intimate gatherings, pre-dinner moments, or any time you want a gimlet-style drink that feels lighter yet still characterful.

Ingredients
Cocktail Colin says:
Dry sherry leads with crisp nuttiness while sweet sherry adds a rounded raisin-like richness, tightened by lime juice’s bright snap; a dash of absinthe brings anise lift and the ginger slice adds a fresh, peppery edge. It works because lime and ginger cut through the sweet sherry while absinthe perfumes the dry sherry’s dryness, ideal for gimlet fans who want something lighter, wine-driven, and aromatically complex.

FAQ's
Why is the Eva Gimlet stirred instead of shaken?
The Eva Gimlet is stirred instead of shaken to maintain the clarity and smooth texture of the drink. Shaking can introduce air bubbles and ice shards into the cocktail, making it cloudy. Stirring gently combines the ingredients while preserving the delicate balance of flavors without diluting the cocktail too much.
Can I substitute the absinthe in the Eva Gimlet with something else?
If you're looking to substitute absinthe in the Eva Gimlet, consider using Pernod or another anise-flavored liqueur. These alternatives will provide a similar herbal profile, though the distinct complexity of absinthe might be slightly diminished. Always use substitutes sparingly to maintain the intended flavor balance of the cocktail.
What is the best way to serve an Eva Gimlet?
The Eva Gimlet is best served in a chilled cocktail glass to keep the drink cold and enhance its smooth texture. Optionally, you can garnish with a lime wheel or a fresh ginger slice to add a decorative touch and a hint of fresh aroma, complementing the cocktail's flavors.
How does the alcohol content of an Eva Gimlet compare to a standard Gimlet?
The Eva Gimlet has an alcohol content of 14.4%, which is slightly lower than a standard Gimlet due to the addition of both sweet and dry Sherry, which are typically lower in alcohol content compared to the gin used in a traditional Gimlet. This makes the Eva Gimlet a milder alternative, with a nuanced flavor profile.
What food pairs well with an Eva Gimlet?
The Eva Gimlet, with its blend of herbal, citrus, and ginger flavors, pairs excellently with seafood, particularly shellfish like oysters or shrimp. The cocktail's acidity and slight sweetness can also complement spicy dishes or Asian cuisine, providing a refreshing balance to rich and flavorful meals.
