How to make a Aperol Fizz

Serves 1 · Takes 3 minutes
Add the Aperol, the sugar syrup, the egg white and the juice of one healthy lemon to the shaker
Shake without ice to emulsify the egg white
Then add some ice cubes and shake again
Pour into the glass and top up with soda water
Garnish with a grapefruit peel twist and serve
